Founded by the Salinas Family in the late 1800s, the Schaps brothers, who own the well-known farms in Guatemala, took over their grandfather’s farm in 2013. The farm is planted under 70% Bourbon trees and approximately 30% of Pacas. The Inga trees are used to provide protection from sun and heat, making sure the farm is fully shade grown. As the Bourbon trees have struggled to survive due to strong wind in the area of the Ilotepec region, the brothers pay extra effort on planting Pacas variety trees because the shorter trees can resist the wind.
To ensure the optimal quality and productivity, the Schaps brothers combine and implement the traditional and new practices, which are the pruning of shade trees and coffee trees and good soil management as well as cutting edge coffee practices.
