This coffee was featured in our barista Ray’s MOBC-winning routine this year. It underwent carbonic maceration, a method inspired by winemaking — placing whole cherries in stainless steel barrels, allowing them to ferment in a carbon dioxide-rich environment. Whole ripe Geisha cherries are pulped and placed in CO2-pressured tanks before drying on raised beds with their parchment intact, developing deep fruit sweetness.
