About the coffee
A collaboration between Jamison Savage, Sasa Sestic, and Elvin Siew, this Symmetry lot comes from the esteemed Iris Estate in the highlands of Volcán, Chiriqui, grown at elevations of 2,300 masl. This coffee was featured in our barista Ray’s MOBC-winning routine this year. It underwent carbonic maceration, a method inspired by winemaking — placing whole cherries in stainless steel barrels, allowing them to ferment in a carbon dioxide-rich environment. This results in a vibrant and flavourful cup.

The name Symmetry reflects the balance between CO2 fermentation structure and the expressive sweetness of whole-cherry drying, yielding a cup that is both complex and approachable. Whole ripe Geisha cherries are pulped and placed in CO2-pressured tanks before drying on raised beds with their parchment intact, developing deep fruit sweetness. The result is a distinctive Panama Geisha expression, showcasing tropical fruit, berry character, and rich sweetness.
