About the coffee
This coffee comes from Los Cantares, an award-winning farm located in Paso Ancho, Volcán, Panama — a region celebrated for producing some of the world’s most expressive Geishas.
Processed using a Dark Room Washed method, after the coffee cherries are depulped and washed, they then undergo a slow, controlled drying in a shaded, climate-controlled environment. This meticulous approach preserves aromatic compounds while enhancing clarity and structure in the cup.
In the cup, the coffee is elegant and composed. Bright yuzu-like citrus leads, followed by soft lavender florals and a refined Earl Grey tea finish. The profile is clean, delicate, and aromatic — a classic expression of Panamanian Geisha with a restrained, graceful character.
About the farm
Los Cantares is led by Marie Jackie Mercer Vallarino, whose name has become synonymous with exceptional Panamanian Geisha. Since 2012, the estate has frequently appeared on the Best of Panama top charts — a testament to both quality and consistency.
Situated near the Volcán Baru National Park at elevations of around 1,600 metres above sea level, Los Cantares is shaped by a unique highland environment. The farm is cloaked in mist and rainfall for much of the year, and nourished by the surrounding Volcán Barú rainforest and the Chiriquí Viejo River. This rich terroir plays a vital role in the estate’s ability to produce expressive, award-winning coffees harvest after harvest.
Beyond the cup, Marie Jackie places strong emphasis on workers’ welfare and sustainability. In 2020, Los Cantares made the difficult decision to pause all operations during the height of the pandemic, prioritising the safety and well-being of its workers above all else.
Today, the estate has returned to full operation. In addition to Geisha, the farm also cultivates Typica, Catuai, Caturra, Bourbon and San Ramon — each lot reflecting care, integrity, and a deep respect for the land and people behind the coffee.
